Paccheri pasta with seafood
Ingredients
for 4 people
- 400 g paccheri by Pasta Apulia
- 400 g di clams
- 500 g mussels
- 1 small squid
- 300 gr cherry tomatoes
- Parsley as needed
- 3 garlic cloves
- 1/2 glass ofwhite wine
- Extra virgin olive oil as needed
- Salt as needed
Preparation
Fry a few cloves of garlic in olive oil. When golden brown, remove them and add the clams and mussels, well washed before. Cover with lid and cook for 5 minutes over high heat; once opened, shell them and leave some aside still in their shells. Strain the cooking water and set aside. In a large saucepan, brown the last clove of garlic with the olive oil and add the cherry tomatoes cut in half. Cook until the sauce will form. Add salt, parsley and the squid already cleaned and cut into rings. Sauté for a few minutes, deglaze with white wine and add mussels and clams with filtered water.
Cook the pasta al dente and the seafood in the pan. Servepaccheri by Apulia Pastawith seafood, garnishing with clams and mussels in shell, previously set aside.
